There's a fairly new gourmet market in my neighborhood and they specialize in beautiful, over-stuffed sandwiches. The menu is long and it's so hard to choose. But, you actually have plenty of time to make your choice because the line snakes around the block. Sigh.

Cauliflower Shawarma
My first experience with shawarma was on vacation on the beach in Tel Aviv, Israel. Food vendors were selling falafel and shawarma sandwiches along with cold beverages on that hot August day. I ordered falafel because it's my favorite street food and my sister-in-law, who was my beach buddy that afternoon, ordered shawarma. I'd never had it before but the aroma was intoxicating and I asked for a taste. Hooked!

Cheesy Meatloaf Sliders with Pickled Red Onion
Meatloaf is one of those recipes that I love as much the next day, as a leftover, as I do freshly made for dinner. It's one of my favorite comfort foods when served fresh with mashed potatoes and gravy (diners do this dish SO well) but it's equally amazing as a sandwich the next day.

Grilled Cumin Chicken Tacos with Guacamole and Pickled Red Cabbage
I know "taco Tuesday" is a thing and today is not Tuesday. But, when faced with a great taco idea, I see absolutely no logic to waiting. My normal market only carries white flour tortillas but I was shopping at a different location and saw the corn ones. Instant inspiration and tacos coming right up!

Curried Chickpea and Hummus Sandwich
Happy National Hummus Day! Yes, there is such a thing and well there should be because I love hummus. My parents lived in Israel for a few years and they brought back a life-long love of Middle Eastern cuisine. So I grew up with tahini, falafel and massive doses of hummus. And as an adult on my own nothing's changed. My fridge looks a whole lot like theirs did, complete with many tubs of Sabra hummus.

Turkey and Swiss Stuffed Sammie
We're back! Did you miss us? Nah, I left you in very good hands and I see that Kim B., Stacy and Kim W. brought you some delicious options. Brian and I are still in vacation recovery mode today. It's so much fun to go away but nice to come back home. Um...OK, I'm totally lying. I came back kicking and screaming. And this morning, instead of relaxing in my chaise by the water, I have to work, unpack and do laundry. What's so nice about that?

Roasted Beet and Herbed Goat Cheese Sandwich
The combination of roasted beets and goat cheese is pretty common and definitely one of my favorites. I use those ingredients frequently in salads and also tend to order it when I see it on a restaurant menu. But it never occurred to me to make a sandwich out of it until now.

Cheddar Apple Pie Grilled Cheese
Since April is National Grilled Cheese Month, I figured it was time I shared one of my favorite grilled cheese recipes with you. Of course, it's more of an idea than an actual recipe since I'm assuming everyone knows how to put cheese on bread and toast it up. It's the "extras" though, that make each version unique. Tomatoes and avocados are popular additions and I certainly have no objection to a couple of slices of bacon. But, since I'm usually trying to keep it on the leaner side, I tend to stick to this version more than any other.
